So, what all are you ladies cooking up these days?? Let's start sharing our recipes, family secrets etc...

Anyone else out there have a Traeger grill? I've been using my in-laws while they're gone camping and LOVE it!!! Last night I made some simple chicken on it, sprinkled some grill seasoning on them and squirted on some sweet baby ray's b-b-Q sauce (my fav.) and shut the lid and let it cook! You don't have to flip them, nothing!! It's like an oven, you set the temperature (I did 325) and it smokes it too! YUMM!

inside, I made up some easy pasta salad...

My sister Nicole taught me this years ago, you cut up some carrots (I use baby cause they're already peeled ) throw them in your boiling water for a few minutes then add you rotini pasta, when there's about 2 or 3 minutes left add some cut up zucchini and sliced mushrooms. After it's done cooking, rinse under cool water in a strainer and then, mix with some italian dressing (whatever your fav. is) add some sliced olives, parmesan cheese, grape tomatoes or halved cherry tomatoes and i added some stripes of gallo salami that I cut up. That was dinner! So simple :o)
Before dinner while I was cooking, the kids all gathered around Grandma Dot at the Island in the kitchen and snacked on veggie sticks and ranch (I love the ranch mix that you make with mayo and milk or buttermilk). Granny kept saying how she couldn't believe how much my kids like veggies and how good they are for them :o) Note: the cuke and zucchini sticks went the fastest!!

I have a family secret recipe that is to die for and I'll go scan it and try pasting it here :o)

Sorry mom, you might not be the only one at the potluck with our Zucchini coconut black walnut with cream cheese frosting cake anymore!! LOL!!

Just joined the group, but I don't cook too much with wine!! lol I actually hate to cook, but used to really love to cook. Don't know what happened, but the thought of coming up with ideas for dinner is stressful for me anymore. All the things that I used to love to cook I can't cook anymore. I'm one of those meat with gravy, mashed potatoe, down home cookers. But now, my hubby is a diabetic (sp) and makes it really hard for me to come up with new and wonderful meals for the both of us.

I'll have to look through my recipe stash and look for some of my favorite recipes to post. I've been working on cookbook gifts for my family, so all my recipes are in a box in my craftroom waiting for me to get back to it!

Stay tuned!!

Just when I start as the group Diva for cooking, I leave the chicken on the Traeger for at least an hour too long and totally dry it out!! I have a really good excuse though!! I was busy sewing! :o)
Hey, my hubby could have taken the meat off the grill, but his excuse was he couldn't find the meat thermometer! But, I did a yummy alfredo sauce over left over noodles from the night before (that I hadn't put italian dressing on).
Here's the recipe:INGREDIENTS
1/2 cup butter
1 (8 ounce) package cream cheese
3 cloves garlic
2 cups milk
6 ounces grated Parmesan cheese
1/8 teaspoon ground black pepper

DIRECTIONS
Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic (squeeze it through the garlic press), stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with hot pasta to serve.

Note, if you use half and half instead of milk, you don't have to use as much cream cheese. If you like it a little saltier, then add to taste :o)

Okay, I am not much for measuring so please use your taste buds ;)

1 pork roast
1 tsp liquid smoke
1 1/2 tsp cummin
1 1/2 tsp chili powder
1 1/2 tsp garlic salt
2 tsp minced onion or onion powder

1 tsp of your favorite Hot Sauce if you like it a little spicy
BBQ Sauce as needed

Okay start with a pork loin roast. Cut it in 2 inch thick pieces. Add a stick of butter to crock pot and melt. Then place in the roast. Add all seasonings including liquid smoke and some of your favorite BBQ sauce. I make three circles while squeezing. Cook on high simmer all day long for at 5 hours with the lid on. Can be longer if needed. If you need it to cook quicker turn up the heat, it is okay to do so up to 300 degrees for 2.5 hours. After either 2.5 or 5 hours pull pork apart with two forks. It should pull apart easily. Pull it all apart as best as you can add more BBQ sauce three big circles again. Replace lid and cook on high simmer for another hour. After hour stir and break apart even more and scoop onto rolls. I love adding shredded mexican fiesta cheese on top. If you like more BBQ flavor squeeze on sandwich as much as wanted. ENJOY!! We had these yesterday and I love them ;)
